Fabulous knives! June 25, 2008 My father was a professional-level cook and he taught me that a good set of knives is the single most important tool used in the kitchen. I also believe you should invest enough time researching and invest enough money in making sure you have a set of knives that will last a lifetime. That being said, I will state that these knives are ideal. They are full tang knives (blade runs from tip to handle so they won't fall apart where the blade and handle meet), perfectly balanced, high-carbon stainless-steel and require little maintenance except for occasional sharpening. These should only be hand-washed (and I recommend thoroughly drying them immediately after washing). They function, feel and display beautifully. This is the perfect set of knives for the beginner or the professional. I highly recommend them.
Good value for the money June 17, 2008 This set is a very good value for the money. It is unusual to get forged and not stamped knives at this price. Most knives in this price range are a cheaper grade of stamped stainless. The cheaper knives won't rust because the they have a high chromium content but lower carbon content and poor heat treating which means they won't hold a very good edge and never seem to sharpen like new. The Insignia2's on the other hand are forged, have a higher carbon content, and are better heat treated, but lower chromium content. This means they will sharpen easier and hold an edge longer but will require a little more care. They should be hand washed as all fine cutlery should be and immediately dried to avoid staining. I would recommend using a steel to straighten the edge periodically which removes little or no metal before using the built in sharpener. You can go much longer before using the sharpener extending the life of your knives. Overall nice block and very good quality for the money.
Great Knives June 9, 2008 This is a great knife set. They are weighted correctly, sharp, and look nice. I buy more fresh ingredients now because these knives make it so enjoyable to cook.
Too expensive for a bad quality product May 19, 2008 I bought this cutlery because I had a similar chef knive. However, with 3 months of use, it started to rust. When I called their warranty, they said that it must be something wrong with water in our house. The blade is too thin, and the edges started to break. I wouldnt buy this. I think in probably six months I will buy a better knive.
