It's also lead-, arsenic-, and cadmium-free.In classic white, with the traditional souffle-dish ribbed exterior, this shallow, 4-inch-diameter dish serves as a cooking and serving vessel for the silken custard known as creme brulee. Because Apilco porcelain is safe in the oven, refrigerator, or even the freezer, the custard can be baked in the dish and chilled, and then its sugar crust can be melted under a broiler or with a kitchen blowtorch. Despite the name, this is a not a single-use dish. Elegant quiche or lemon tarts can also be prepared in it, and at the table, this dish is perfect for jam, butter, sauces like aioli, and other condiments.
