They have a straighter edge than a chef's knife, and a more rounded spine, particularly near the point. A carving knife is used to carve poultry, roasts, hams, and other large cooked meats. Harmonious cutting tool. June 25, 2008 Beauty, elegance, and balance. I own A LOT of kitchen knives. I'm addicted.
The design and thought that went into this knife is amazing. At first, it seems uncomfortable to hold, or weird. But, once you've taken this knife and held it and chop a couple of vegetable, you're hand will quickly form onto the knife as you grip. Your palm will gently rest on it's handle and because of the design, more of your power will be transfered thru the knife and into the vegetable or fruit you are cutting. This knife is beautiful, useful and ergonomic.

These knives are amazingly sharp. They slice through everything with ease. Butterflying a chicken breast was a breeze, the knife sliced through like a razor blade. Even though the handles look like they could be uncomfortable, they fit your hand perfectly. I have also handled these knives wet and I didn't get the feeling that they were going to slip out of my hands. I beleive the pearl between the blade and the handle helped me keep a secure grip while the knife was wet. Overall these knives are terrific and I would recommend them to anyone without hesitating.
